Sourdough How To: Stretch & Folds

I used to be SO terrified of stretch & folds - thinking they were so time consuming & tedious. That simply isn’t true.

My Stretch & Fold Schedule:

• Mix ingredients

• 30 minutes later, 1st S&F

• 30 minutes later, 2nd S&F

• 30 minutes later, 3rd S&F

• Bulk ferment for several hours until doubled

• Shape dough

• Cold ferment overnight

• Bake in the morning
